1. Thunderbird

I can connect, but not send due to self signed certificate

It does not pull down any emails via imap either

2. Outlook works great

3. Windows mail app windows 10
I can get the emails but can not send no error they just never get sent

    Thunderbird always used to work with self-signed, but I've since switched to Let's Encrypt certificates. You should get prompted to accept the certificate when you go through the IMAP and SMTP set up. From then on you should be OK.

    Are you using the IMAP/POP server, Kopano or Zarafa?

    How did you setup letsencrypt for the email server?

    There is a letsencrypt module and it only seems to work with the webservers
