Hey COS devs, any plan to upgrade PHP to the latest version? My Joomla install keeps warning me that the current 7.3 version is outdated and no longer receives security updates by the devs.

No and ignore what Joomla is telling you. PHP7.3 is provided from the Redhat SCLo repos and they have not produced a 7.4. As Redhat 7.9 is considered feature complete, I do not expect a 7.4. If, however Redhat do publish a 7.4, it is easy to incorporate it into ClearOS.
With respect to security updates, Redhat generally backport patches into currently released apps giving them a minor version bump. The last update to PHP7.3 was in September.
