I don't want the admin screen on port 81 available to the world. And whatever is on port 1875 (some sort of remote audit feature?) needs to be blocked too. What's the best way to accomplish this without getting into conflict with what ClearOS is doing on its own here?

Just go the the Incoming Firewall and remove the port 81 rule. It is only really necessary for setting up so you don't lock yourself out when it brings up the firewall (especially in a Standalone with Firewall installation). Completely safe to remove.
1875 is for remote system auditing. Certainly on the paid for version and possibly on the Community versions, Clearcenter will try to audit your box and if it sees changes to any of the files it monitors it will e-mail you. Typically the changes are caused by automatic updates (and you can get huge lists!). If you don't want this, it is safe to close 1875. I had mine closed for years until I found out about the remote audit.
